A Perfect Summer Lunch
Italy has changed us. Our time here has somehow just become one long meal...
Lemon Basil Parmesan Oil Pasta
ingredients:
1/2 lemon per serving
fresh basil
shaved parmesan
olive oil
fresh pasta (Ames and I are divided on how important this is. I prefer fresh, it tastes great with both actually, I am very impatient waiting for pasta to cook- 3 minutes is doable.)
Mix lemon juice and oil with torn basil leaves and dress the pasta. Then top with shaved parmesan.
Salad is just arugula, seared asparagus, tomatoes, goat cheese for Amy and shaved parmesan for me. Dressing oil, salt and another squeeze of lemon.
